Description

Fructose is used commercially in foods and beverages. It increases starch viscosity more rapidly and achieves a higher final viscosity than sucrose. It has all the fiber squeezed out of it and so the fructose is easily absorbed into the bloodstream. High-fructose-corn syrup is used in frozen products.

Applications
Le fructose est utilisé commercialement dans les aliments et les boissons. Il augmente la viscosité de l’amidon plus rapidement et atteint une viscosité finale supérieure à celle du saccharose. Toute la fibre en est sortie et le fructose est donc facilement absorbé dans la circulation sanguine. Le sirop de maïs à haute teneur en fructose est utilisé dans les produits congelés.
