Applications
Le benzoate de potassium est fabriqué principalement pour l’utilisation des aliments et des boissons. Il s’agit d’un conservateur chimique qui, à de très faibles concentrations, inhibe l’activité des micro-organismes. Il est utilisé dans les boissons gazeuses. La durée de conservation du cidre non pasteurisé peut être considérablement prolongée en ajoutant du benzoate de potassium. Il est également utilisé comme sifflet dans de nombreux feux d’artifice.

Solubilité
Soluble dans l’éthanol, légèrement soluble dans le méthanol, insoluble dans l’éther.

Remarques
Hygroscopique. Protéger de l’humidité et de l’eau. Entreposer sous gaz inerte sec, à l’abri de l’humidité et des agents oxydants.
