Potassium hydrogen L-tartrate is used for stabilizing egg whites, whipped cream and for anti-caking and thickening. It is utilized for the prevention of crystallization of sugar syrups and reduces the discoloration of boiled vegetables. It is an active component in baking powder. It is used in household items in association with lemon juice or white vinegar to clean metals such as brass, aluminum and copper. Furthermore, it serves as a primary reference standard for a pH buffer.

Applications
Le L-tartrate d’hydrogène de potassium est utilisé pour stabiliser les blancs d’œufs, la crème fouettée et pour prévenir l’agglomération et l’épaississement. Il est utilisé pour la prévention de la cristallisation des sirops de sucre et réduit la décoloration des légumes bouillis. Il s’agit d’un composant actif de la levure chimique. Il est utilisé dans les articles ménagers en association avec du jus de citron ou du vinaigre blanc pour nettoyer les métaux tels que le laiton, l’aluminium et le cuivre. De plus, il sert d’étalon primaire de référence pour un tampon de pH.

Solubilité
Soluble dans l’eau et l’acide minéral dilué. Insoluble dans l’alcool.
